The first manual for altar servers was published in Antwerp (Belgium) in 1506 and soon translated into English (The Interpretacyon and sygnyfycacyon of the Masse). There we read among other things: “He [server] doth serve and help the priest at Mass, he must beware that he do not beholde the preest in the face. He shall be dylygent to prove and knowe the water from the wyne. He shall absteyne, in as moche as he may, from too moche spyttynge and kowghynge or making any noyse. HE SHALL KEPE DOGGES FROM THE AULTER.”
